Hi friends! It’s been a minute since I shared any kind of recipe and thought that yesterday’s rainy, chilly weather (ummm hello, Spring, are you there?) called for some cozy, yummy vegan + gluten-free cookies!
Since I refused to go outside yesterday, I had to work with what I had. Which was pretty limited. These cookies were made with no flour, and just 3 ingredients, but you’d never even know. To my surprise (though not really a surprise), they turned out delicioso!
I basically replaced flour with oats, and the bananas were enough of a sweet binder to hold these babies together in the oven. At the end of the recipe, I’ll offer a couple suggestions if you want to kick these cookies up a notch. But believe me, you don’t really need it. Who doesn’t like bananas + peanut butter?
These were a big hit at our yoga studio for being the perfectly small sweet treat one might crave on a day like today. The best part is it only takes about 5 minutes to mix up the ingredients and 15 ish to bake! Wa-la, yummy and allergy-friendly cookies in 20 minutes. So when you need a quick and easy treat made with minimal and wholesome ingredients, give these cookies a try!
A Note On Natural Vs. Processed Peanut Butter
Hokay, those of you working your way towards a healthier lifestyle, this one is an easy swap. Natural peanut butter should have one or two ingredients- Peanuts and salt. The ingredients in processed peanut butters will vary by brand, BUT they all contain hydrogenated oils and added sugars, bleh. And because of this, it holds a different consistency than natural peanut butter.
The first time you pick up a natural pb brand, you might be weirded out by the oil separation on top. But this is GOOD and NATURAL! This happens because there’s no added preservatives to your butter and all you gotta do is use a spoon or knife to stir it up. Another option is to store it upside down to let it mix on its own. Once you compare the flavor to a processed peanut butter, you’ll most likely never go back.
Hint- it’s also really easy to make your own peanut butter in a food processor!
In Any Case, here’s the recipe!
2-3 bananas (about 1 1/4 cup) mashed
2 cups oats
1/2 cup natural peanut butter
1/2 teaspoon vanilla extract
2 table spoons maple syrup
pinch sea salt
1/4 cup raisins, chocolate chips, walnuts, etc.
~ Preheat oven to 350
~ In a bowl, mash up bananas to form a paste
~ Add in remaining ingredients and mix together well
~ Scoop spoon fulls onto a parchment paper lined baking sheet (recipe should make about 16 cookies) & take a minute to mold spoonfuls into cookie shape as they won’t change shape much while they bake
~ Bake for 14-16 minutes until they are firm and lightly browned
~ Let cool and enjoy!
To sweeten up the recipe, you can add in maple syrup, agave or stevia to your liking. It could also be fun to throw in some dairy-free chocolate chips! I ended up adding in some last minute raisins since they were already out on the counter, so good!
Can be frozen! Combine ingredients as you would and then wrap each spoonful individually in plastic wrap. Throw em in the freezer until you are ready for a sweet treat. Let them defrost on a countertop for a little while and bake when they become soft :)
