Hey, y'all. Happy happy Friday! As we dive into the weekend, I just wanted to stop by and drop off this recipe for the simplest, most delicious homemade granola! With only a couple ingredients, I’m happy to say that it’s totally allergen friendly— vegan and gluten-free! I was initially inspired to start playing with granola recipes when I realized how much $$$ I would save by making my own. I mean, the bags of granola I was buying from Whole Foods or Wegmans were about $8-$9 for a small sized bag, while a huge bag of organic oats costs about $2.99! And then the freedom to add whatever I damn well please to the mixture was the extra bonus I needed to make it a regular thing in our household. Between the two of us, Mike and I eat a ton of granola. I figured I better make it as healthy (and still delicious) as possible.
Okay, in the spirit of keeping this short & simple, I’ll just leave a couple ideas here for what to do with this yummy granola!
Top Your Smoothie Bowl- It may be officially Fall as of last week, but keep the smoothie bowls coming! Top em’ with this delicious granola and a seasonal fruit. Yummm. Bonus if you’ve mastered a pumpkin flavored smoothie bowl!
In Your oats- Tis the season for a warm, cozy bowl of oats. Another thing perfect to top with this delicious granola. Add in some dried fruit and nuts for a perfect fall morning breakfast.
Mix It With Dairy-Free Yogurt- Have y’all tried coconut milk yogurt, yet? If not, 10/10 would totally recommend crafting up a yogurt parfait with some coconut yogurt and homemade granola!! My fave fruit topping is blueberries :)
Make Granola Bars- A couple simple ingredients such as granola, peanut butter, dark chocolate (vegan) and maple syrup could make some pretty awesome homemade granola bars to grab throughout the week!
Roll Bananas In It And Freeze- For a super yummy dessert-like treat, dip the bananas in dark chocolate, coat them in granola and pop em’ in the freezer! Seriously, thank me later ;)
ALRIGHT, here’s the recipe. Enjoy!
2 cups oats
4 tbs sliced almonds (or more, to personal taste)
2 tbs chia seeds
1 tbs coconut flakes (optional)
1 1/2 tsp vanilla
1/4 cup coconut oil
1/3 cup maple syrup
Pre-heat convection oven to 325 degrees
Very simply, add all ingredients into a medium mixing bowl and combine
Line a baking sheet with parchment paper
Bake in oven for 20-25 minutes or until it’s nice and crispy and golden!
If using a full kitchen oven, remember that it’s slightly different than a convection oven and the bake time may vary. So just keep an eye on it!
Let cool and then store in a big mason jar for all of your granola-filled goodies!
